Ingredients
500gHam, lean, diced
1KgButternut pumpkin, diced
PinchSalt
PinchPepper
100gLight cheese, grated
1Brown onion, diced
100gButter
3LitreLight milk
2gPlain flour
750tspDijon mustard
tspThyme, dried
gPenne or macaroni pasta
Spray light olive oil
Method
- Preheat Oven to 180 c
- Place pumpkin, & onion on a lined tray with baking paper, spray with oil, season with salt & pepper and roast for 20 mins or until pumpkin is soft
- While pumpkin is cooking, cook pasta in boiling salted water
- Make cheese sauce, melt butter add flour till it forms a smooth roux, add milk slowly whisk constantly, season with salt, pepper and Dijon mustard whisk in half the grated cheese
- In a large bowl add cooked pumpkin mix, ham, drained cooked pasta and cheese sauce, stir well
- Place into individual foil dishes sprinkle the remaining grated cheese bake for 20 minutes

Variations
Cheese sauce can be made in a thermomix to save time
