Ingredients

1cupPlain flour
1tbspSugar
1tbspBaking powder
1SelectSalt - pinch
235SelectEgg
1mlSkim milk
2tbspVegetable oil
SelectMashed banana

Method

  1. Combine flour, sugar, baking powder and salt. In a separate bowl, mix together egg, milk, vegetable oil and bananas.
  2. Stir flour mixture into banana mixture. Batter will be slightly lumpy.
  3. Heat a lightly oiled frying pan over medium high heat. Pour the batter onto the frying pan using approximately 1/4 cup for each pancake. Cook until pancakes are golden brown on both sides. Serve hot.

Recipe description

Top with sliced banana and a drizzle of honey. Bananas are available all year but will be more plentiful in warmer months and prices should be lower. Sometimes cheaper prices can also be found midweek when you can take advantage of specials on slightly over ripe produce not sold on the weekend. These are ideal for cooking.
