Beef and Salad Burrito Wrap
1KgLean beef mince
2unitBrown onion, diced
2tspGarlic cloves, crushed
420g can0.5Red Kidney Beans
2tbspTaco flavour sachet or paprika
1unitCorn canned, drained
4unitTomatoes, sliced or diced
2cupLow fat yoghurt
2cupReduced fat cheese, grated
- Brown mince, onion and garlic in a fry pan.
- Add taco mix, carrot and kidney beans, cook through until liquid has evaporated. Stir through corn.
- Place one heaped Tbsp of mixture into centre of tortilla with salad items and top with yoghurt and cheese.
- Fold and wrap tortilla. Serve warm, wrapped in grease proof paper.
Mexican spiced beef mince served with salad, cheese and yoghurt served wrapped in a burrito tortilla.
Cooked rice can be added to stretch the mixture to cater for more people. This mince mixture can be prepared in advance and frozen. Taco shells can also be used with this recipe in place of burrito breads or tortillas. Burrito breads can be purchased frozen and defrosted as needed.
