75mlMilk, low fat
3unitHam slices, diced
0.5cupCheese, grated low fat
0.25cupShallots, chopped
0.5cupCapsicum or tomato, diced
0.5cupCorn kernels (canned)
Method
- Preheat oven to 180deg C.
- Trim crusts off bread and flatten with rolling pin or by hand.
- Place flattened bread into a greased muffin tray pushing bread down to the base of the muffin shape.
- Mix eggs and milk in a bowl and add pepper if desired.
- Into each bread cup place the ham, shallots, capsicum or tomato, corn and last of all grated cheese.
- Pour in egg milk mix to just below the level of the muffin tin.
- Place in the oven and cook for 15 to 20 minutes.
