Ingredients

1kgchicken breast cut in to chunks
2cupsdiced vegetables (i.e. carrot, cauliflower, sweet potato, or spinach OR frozen mixed vegetables)
1tbspoil
1onion, diced
1tspgarlic, crushed
1tspgrated root ginger
1tspgaram masala
1tspground cumin
1tspsweet paprika
1tspturmeric
1tspchicken stock powder
400gchopped can tomatoes
250mlPhiladelphia reduced-fat cooking cream
To serve,steamed basmati rice

Method

  1. Heat oil in a large saucepan and cook chicken for 5 minutes.
  2. Add onions and 2 cups of vegetables and cook until softened.
  3. Reduce the heat; stir in garlic, ginger, spices and cook for 1 minute, or until aromatic.
  4. Add tomatoes, cover and simmer for 10 minutes.
  5. Stir in Philadelphia reduced-fat cooking cream and simmer until heated through.
  6. Spoon chicken and sauce over rice.
