1tspextra virgin olive oil
450glean beef mince
400glow fat cheddar, grated
12SelectSea salt and freshly milled pepper
18014cm soft tacos or wraps
1Roma tomato, cut into 12 wedges
0.5avocado, cut into 12 slices lengthwise
15medium white onion, very finely sliced
2sprigs coriander, roughly chopped
limes, each cut into 6 wedges
- Place a large fry pan over medium heat and add the olive oil. When hot, add the mince, stirring from time to time until crumbly and browned, about 10 minutes.
- Add the grated cheese and stir until completely melted, about 3 minutes. Remove from the heat and season.
- To assemble the tacos, warm tacos on a BBQ or in a dry fry pan or microwave then lay out on serving plates. Place 30ml of mayonnaise on each tortilla and spread using the back of a spoon.
- Evenly distribute the cheeseburger filling among the tortillas and top with the tomato and avocado slices, onion, chopped coriander and a drizzle of salsa. Squeeze a couple of the lime wedges over the tacos and serve the rest on the side.
The taco cheeseburger is prepared with treat ingredients that children love. The benefit of this preparation is the reduction in the empty carbs found in fluffy white bread being replaced with corn tortillas. They may catch on!!
