Ingredients
1Large onion, diced
1Large potato, diced
1Large sweet potato, diced
1tbspCumin
1tbspPaprika
0.5tbspCoriander
0.5tbspCinnamon
0.25tbspTurmeric
1.5kgChicken, diced
1cupWater
400gCrushed tomatoes
800gCoconut cream
2kgRice, cooked
3cupsPeas, cooked
6cupsBaby spinach
Pinch Salt and pepper
Method
- Bake diced chicken in oven for 45 mins at 160 C
- Saute onions and potatoes in large pan. Add in all spices and stir
- Add water, tomato, coconut cream, salt and pepper and cook until potatoes are soft
- Combine cooked rice, chicken and sauce in a large bain
- Mix in peas, cover and put back oven in for 10 minutes
- Remove from oven, mix through spinach and serve
