2Garlic Cloves
8Eggs
1cupParsley (Finely chopped)
1cupCilantro (Finely chopped)
1bunch of scallions (Finely Chopped)
3tbspOil
1tspSalt and Black pepper (each)

Method

  1. Heat oven to 180C.
  2. Heat the oil in a pan, add minced garlic and cook until fragrant.
  3. Add the herbs and scallions and cook until wilted, about 2 min. remove from heat.
  4. Add the eggs, salt and pepper and mix together.
  5. Transfer to non-stick oven-proof skillet or glass baking dish.
  6. Bake 15 min.
  7. Let slightly cool before transferring to a serving plate.
