Ingredients

3KgPork
1tbspSmokey paprika
1tbspCumin
1tbspCoriander
2cupChipotle sauce
2cupGreen capsicum, diced
2cupRed capsicum, diced
2cupOnion, diced
500gCorn chips
1cupCheese, grated
0.5cupSour cream low fat

Method

  1. In a deep tray add pork, spices, sauce, salt, pepper and enough water to cover the base of the tray
  2. Cover with paper and foil and cook on bottom of oven for 4 hours or until pork is soft enough to pull
  3. Scrape off skin and fat from the pork and break up meat
  4. Combine capsicums and onion and add to pork
  5. In individual serving trays place corn chips, then pork mix, cheese, a drizzle of chipotle sauce and sour cream
