62.5golive grove classic spread, melted
200gplain flour
2gparsley, chopped
1egg, extra large
125glight tasty cheese
25gbaby spinach
155mlfull cream milk
1 1/2teaspoonsbaking powder
125gbacon, chopped
15gparmesan cheese, grated


  1. Pre-heat oven to 180 degrees celsius and grease or line muffin tray.
  2. Whisk flour and baking soda together in a large bowl.
  3. In a separate bowl whisk together eggs, milk and melted olive grove classic spread.
  4. Add egg mixture to flour mixture and stir to combine.
  5. Fold in spinach, onions, garlic, parsley, chives, bacon, salt and pepper to taste.
  6. Divide mixture evenly amongst the greased muffin tin.
  7. Sprinkle parmesan cheese on top of each muffin.
  8. Bake for 20-25 minutes or until skewer or toothpick comes out clean.

Vegetarian option – omit bacon. Vegan option – swap out tasty and parmesan cheese with vegan cheese. Replace the egg with a flax egg
