Ingredients

400gSweet potato
50gCarrot, grated
425gCanned tuna, drained
100gWholemeal flour
50gZucchini, grated
100gOnion, chopped
50gParmesan cheese
2Eggs

Method

  1. Steam sweet potato until tender and then mash
  2. Combine sweet potato, tuna and onion in a large bowl
  3. Add zucchini, carrot, cheese and flour and mix until all ingredients are combined
  4. Beat eggs with a fork and add to mixture
  5. Heat a large, non-stick frying pan over medium heat
  6. Spoon portions of the potato mixture into frying pan and cook until golden brown on both sides
  7. Serve chilled with a side salad
