Ingredients
400gSweet potato
50gCarrot, grated
425gCanned tuna, drained
100gWholemeal flour
50gZucchini, grated
100gOnion, chopped
50gParmesan cheese
2Eggs
Method
- Steam sweet potato until tender and then mash
- Combine sweet potato, tuna and onion in a large bowl
- Add zucchini, carrot, cheese and flour and mix until all ingredients are combined
- Beat eggs with a fork and add to mixture
- Heat a large, non-stick frying pan over medium heat
- Spoon portions of the potato mixture into frying pan and cook until golden brown on both sides
- Serve chilled with a side salad
