Super Power Salad

2cupSweet potato, cubed and roasted
0.5SelectOlive oil, extra virgin spray
80cupGoji or mixed super berries
mlBalsamic dressing, reduced fat
- Cut Sweet potato into rough dice about 2cms square. Spray baking tray and sweet potato with olive oil and bake in oven approx. 20 minutes at 180 degrees.
- Prepare quinoa according to directions on packet. Generally, wash quinoa then add to a pot with double the water to amount of quinoa used (eg. 1 cup quinoa to 2 cups water). Stir once and bring to boil then simmer with lid on for approx. 15 minutes.
- Add kale to cooked quinoa, preferably while quinoa is still warm so the kale can wilt slightly.
- Sprinkle with sweet potato and berries and add a portion of balsamic dressing (20ml per serve).
