1KgMacaroni, cooked
1/2cupWater
1cupCauliflower
1cupPumpkin, diced
1cupCarrots, sliced
2cupLow fat milk
2cupLow fat grated cheese
125gLow fat cream cheese

Method

  1. Dice pumpkin and carrot, break cauliflower into florets.
  2. Add to water and cook until vegetables are tender.
  3. Add vegetables and water to a blender and blend until smooth.
  4. Return blended vegetables to saucepan, add milk, cheese and cream cheese, stir until smooth over a medium heat.
  5. Add cooked macaroni (cooked to packet instructions) to mixture, reduce heat, mix thoroughly, cook for five minutes covered.
  6. Dish out into desired containers.
