Ingredients
150gBrown rice
0.25Tomato
0.25gCucumber
10gDried coriander
20mlLow fat natural yoghurt
100gChicken breast, diced
10gMango chutney
10gTandoori paste
Method
- Marinate chicken in tandoori paste and half of the yoghurt
- Cook rice as per instructions
- Dice tomato and cucumber and mix with coriander and remaining yoghurt
- Place cooled rice in an individual serving bowl and add tomato mixture
- Chargrill marinated chicken mixture
- Place cooked chicken on top of tomato mixture and top with chutney
