Ingredients

150gBrown rice
0.25Tomato
0.25gCucumber
10gDried coriander
20mlLow fat natural yoghurt
100gChicken breast, diced
10gMango chutney
10gTandoori paste

Method

  1. Marinate chicken in tandoori paste and half of the yoghurt
  2. Cook rice as per instructions
  3. Dice tomato and cucumber and mix with coriander and remaining yoghurt
  4. Place cooled rice in an individual serving bowl and add tomato mixture
  5. Chargrill marinated chicken mixture
  6. Place cooked chicken on top of tomato mixture and top with chutney
