Ingredients
1CupZucchini, shredded
1CupSweet potato
1CupPumpkin
1CupCorn kernels
1CupBaby spinach, shredded
1EachSpring onion
1CupChickpea flour
2TspCumin
1TspCurry powder
1TspHot cajun mix
1EachEgg, lightly beaten
1TspPepper
Method
- Place shredded zucchini, sweet potato and pumpkin in a a bowl and squeeze out any excess moisture
- Add corn, spinach, chickpea flour, egg and spices and mix together
- Lightly spray a non-stick frypan and drop spoonfuls of mix in

- Cook until golden brown and cooked through

Variations
The longer you leave the mixture before cooking the more it will thicken. This will give you more of a burger consistency. Can be served with a side salad or on a gluten free roll (optional) as a yummy veggie burger. Patties can be frozen and reheated in an oven or pie warmer.
