Ingredients

1CupZucchini, shredded
1CupSweet potato
1CupPumpkin
1CupCorn kernels
1CupBaby spinach, shredded
1EachSpring onion
1CupChickpea flour
2TspCumin
1TspCurry powder
1TspHot cajun mix
1EachEgg, lightly beaten
1TspPepper

Method

  1. Place shredded zucchini, sweet potato and pumpkin in a a bowl and squeeze out any excess moisture
  2. Add corn, spinach, chickpea flour, egg and spices and mix together
  3. Lightly spray a non-stick frypan and drop spoonfuls of mix in
  4. Lightly spray a non-stick frypan and drop spoonfuls of mix in
  5. Cook until golden brown and cooked through

Variations

The longer you leave the mixture before cooking the more it will thicken. This will give you more of a burger consistency. Can be served with a side salad or on a gluten free roll (optional) as a yummy veggie burger. Patties can be frozen and reheated in an oven or pie warmer.
