Daily specials are used well to create variety on menu - as a small school perhaps offer a weekly lunch box special or meal deal (main meal, snack and drink combo) to make the tuckshop more efficient. Otherwise reduced over volume of options - ie 3 flavoured milk options at present. Remove or alter red items from menu- remove choc muffin and hash brown, serve nachos with toasted tortilla or similar not corn chips, serve nuggets with vegetables in some way- veggie sticks and dip, fried rice portion or on a wrap.
