Watermelon and Kiwi Cups

Ingredients

4cupswatermelon, cut into bite-sized cubes
6-7kiwi fruit
2tbspmaple syrup
1lime
14dixie cups
14popsicle sticks

Method

  1. Place watermelon cubes in a blender or food processor, and bend until you achieve a smooth, juicy consistency.
  2. For a tangy sweet twist, add half a lime and a tablespoon of maple syrup. Set aside.
  3. Peel and dice kiwi fruit and place them in a blender/food processor as well.
  4. Add the other half of the lime and a tablespoon of maple syrup.
  5. Carefully pour the watermelon mixture into Dixie cups, filling them about 2/3 of the way full.
  6. Freeze just until you can insert a popsicle stick upright and then pour the kiwi mixture to the top.
  7. Return the Dixie cups to the freezer and let them chill for at least 6 hours, or until completely frozen.
  8. Once fully frozen, remove the popsicles from the Dixie cups by simply running them under warm water for a few seconds. The gentle heat will loosen the popsicles, allowing you to slide them out easily. Or, leave them out for a few minutes and pull them out and enjoy!
