Red Chicken Pasta

Ingredients

500g spiral pasta
1tbsp canola oil
1brown onion, diced
1.95kgKnorr Napolitana Sauce
500gInghams cooked chicken meat
1cup light sour cream
1cup light cheese, grated, (plus 150g for serving)
1tbsp minced garlic
1kgfrozen mixed veggie (peas, carrot and corn)

Method

  1. Cook pasta as per packet instructions and set aside.
  2. In a large pan, heat oil and brown off onions. Add garlic and cook until fragrant.
  3. Add frozen veggies and cook until softened. Add the Napolitana Sauce and heat through. Remove from pan and cool slightly.
  4. In a blender, blitz the veggies and Napolitana sauce mix until smooth.
  5. Return the pan and fold through the sour cream and cheese.
  6. Add the chicken and stir until coated.
  7. Add in cooked pasta and stir through until pasta is covered in sauce.
  8. Portion into 300ml square, aluminium trays, top with a sprinkle of cheese and serve.

Variations

  • To serve this as a vegetarian option, omit the chicken.
