160mlLow fat milk
0.5cupSelf-raising flour, sifted
2tspBaking powder
1tspMixed spice
0.75cupRolled oats
0.5cupRaisins
1SelectApple, peeled and finely diced
1SelectEgg, beaten
0.25cupHoney (or sugar)
0.5tspVanilla essence

Method

  1. Preheat oven to 180degC.
  2. Combine bran with milk in a bowl and all remaining ingredients. Be careful not to over-mix.
  3. Spoon mixture into a greased 12-hole muffin pan. Bake for 15 minutes or until lightly browned and cooked through. Serve hot or cold.

Recipe description

This is a great high fibre recipe ideal for breakfast service or a school breakfast program. They can be prepared the day before and heated slightly in the microwave just before serving. Match with a warm drink or juice and a tub of yoghurt for a complete breakfast meal deal.
