Apple and Oat Muffin

160mlLow fat milk
0.5cupSelf-raising flour, sifted
1SelectApple, peeled and finely diced
0.25cupHoney (or sugar)
- Preheat oven to 180degC.
- Combine bran with milk in a bowl and all remaining ingredients. Be careful not to over-mix.
- Spoon mixture into a greased 12-hole muffin pan. Bake for 15 minutes or until lightly browned and cooked through. Serve hot or cold.
This is a great high fibre recipe ideal for breakfast service or a school breakfast program. They can be prepared the day before and heated slightly in the microwave just before serving. Match with a warm drink or juice and a tub of yoghurt for a complete breakfast meal deal.
