Ingredients

1KgSkinless, boneless chicken thighs
500gCarrot
2cupChicken broth
1cupDried plum
1eachOnion
500gPotato
3tbspTomato paste
1tspSalt and Black pepper (each)
1tspTurmeric
3tbspOil
1tbspLime juice

Method

  1. In a large pot heat the oil over medium-high heat. Fry the onions, stirring frequently, for about 5 minutes until starting to get golden. Add the turmeric, salt and pepper and fry for another minute.rnrn
  2. Add the chicken thighs to the pan. Brown the chicken for about 1-2 minutes per side.
  3. Add the tomato paste to the chicken and stir. Fry for about one minute.
  4. Add the chicken broth and bring to a light boil. Then add the potatoes, dried plums, carrots, and lime juice. Stir.
  5. Turn down to a simmer over medium-low heat and cover the pot with lid.
  6. Cook for 30 minutes until potatoes are tender. Taste and add salt and pepper if needed.
  7. Serve with rice in individual portions.
