Ingredients
1KgSkinless, boneless chicken thighs
500gCarrot
2cupChicken broth
1cupDried plum
1eachOnion
500gPotato
3tbspTomato paste
1tspSalt and Black pepper (each)
1tspTurmeric
3tbspOil
1tbspLime juice
Method
- In a large pot heat the oil over medium-high heat. Fry the onions, stirring frequently, for about 5 minutes until starting to get golden. Add the turmeric, salt and pepper and fry for another minute.rnrn
- Add the chicken thighs to the pan. Brown the chicken for about 1-2 minutes per side.
- Add the tomato paste to the chicken and stir. Fry for about one minute.
- Add the chicken broth and bring to a light boil. Then add the potatoes, dried plums, carrots, and lime juice. Stir.
- Turn down to a simmer over medium-low heat and cover the pot with lid.
- Cook for 30 minutes until potatoes are tender. Taste and add salt and pepper if needed.
- Serve with rice in individual portions.
