Chicken Caesar Pasta Salad

Ingredients

500gspiral pasta
2hearts of Cos or Romaine lettuce
500gcooked chicken breast, cubed
3/4cup shaved parmesan
4boiled eggs, roughly chopped
1cup of croutons
1cup Caesar 99% fat free dressing

Method

  1. Bring a large pot of salted water to a boil. Add the pasta and cook until al dente, about 10 minutes. Drain the pasta and transfer it to a large serving bowl.
  2. Cut the Romaine/Cos hearts into 1-inch pieces then add them and the chicken to the bowl with the pasta.
  3. Add the dressing and toss to combine.
  4. Add the croutons (optional) and garnish with Parmesan cheese. If preferred, add the croutons on top of each individual portion, to prevent them going soggy.
  5. Serve immediately or refrigerate, covered, until ready to serve.
