Ingredients
500gspiral pasta
2hearts of Cos or Romaine lettuce
500gcooked chicken breast, cubed
3/4cup shaved parmesan
4boiled eggs, roughly chopped
1cup of croutons
1cup Caesar 99% fat free dressing
Method
- Bring a large pot of salted water to a boil. Add the pasta and cook until al dente, about 10 minutes. Drain the pasta and transfer it to a large serving bowl.
- Cut the Romaine/Cos hearts into 1-inch pieces then add them and the chicken to the bowl with the pasta.
- Add the dressing and toss to combine.
- Add the croutons (optional) and garnish with Parmesan cheese. If preferred, add the croutons on top of each individual portion, to prevent them going soggy.
- Serve immediately or refrigerate, covered, until ready to serve.
