1cupGrated, reduced fat cheddar cheese
2cupCooked chicken meat, shredded or diced
1cupCorn kernels, fresh or drained
1Red capsicum, diced
- Combine filling ingredients in a bowl.
- Place tortilla on a pre heated sandwich press and top with filling ingredients. Carefully cover with another tortilla and grill for 5 minutes.
- Remove and rest for a couple of minutes before cutting so the cheese can reset a little. This helps to prevent the filling toppling out and sticking to packaging. Cut into quarters and serve 2 wedges per serve or as appropriate for your age group.
