Fettucine Muffins with Spinach and Cheese

1cupParmesan cheese, grated
1cupGrated reduced fat cheese
- Cook fettuccine according to package directions. Spray muffin pans lightly with cooking spray. rnrn
- Combine 1/2 cup Parmesan cheese, cheese, eggs, salt, and pepper in a large bowl. Stir through chopped spinach.
- Place 2 tablespoons of the cheese mixture into each muffin cup and then portion out equal amounts of fettuccine into each. Pour remaining cheese mixture over fettuccine to fill each cup.
- Sprinkle 1 teaspoon Parmesan cheese over each cup. Bake at 190C for 35 minutes (tops of muffins will be moist). Serve warm.
