Fettucine Muffins with Spinach and Cheese

500gFettuccine, packet
1cupParmesan cheese, grated
1cupGrated reduced fat cheese
4unitEggs, beaten
4cupSpinach, chopped

Method

  1. Cook fettuccine according to package directions. Spray muffin pans lightly with cooking spray. rnrn
  2. Combine 1/2 cup Parmesan cheese, cheese, eggs, salt, and pepper in a large bowl. Stir through chopped spinach.
  3. Place 2 tablespoons of the cheese mixture into each muffin cup and then portion out equal amounts of fettuccine into each. Pour remaining cheese mixture over fettuccine to fill each cup.
  4. Sprinkle 1 teaspoon Parmesan cheese over each cup. Bake at 190C for 35 minutes (tops of muffins will be moist). Serve warm.
