Ingredients

3medium zucchinis (approx. 500 g), grated and squeezed dry
1small brown onion, finely diced
1cup frozen/tinned corn kernels
1/2cup diced pineapple (well-drained tinned pieces or fresh)
200greduced-salt shortcut bacon or leg ham, finely diced
1 cup grated light cheese
1tsp dried oregano
5large eggs, lightly beaten
1cup self-raising flour, sifted
1/4cup vegetable oil
1/2tsp salt
1/2tsp cracked black pepper
2tbsp pizza sauce (swirled through the top)
Extra pineapple pieces for decoration

Method

  1. Preheat oven to 180°C fan forced.
  2. Grease and line a 20 cm x 30 cm rectangular lamington or slice tin with baking paper.
  3. Place the grated zucchini in a clean tea towel and squeeze firmly to remove as much excess water as possible. This is the secret to a firm, non-soggy slice!
  4. In a large mixing bowl, combine the squeezed zucchini, onion, corn, pineapple, ham, and half of the cheese.
  5. Stir in the dried oregano, salt, and pepper.
  6. In a separate jug, whisk together the eggs and oil.
  7. Add the flour to the veggie mixture, then pour in the egg mixture.
  8. Stir until everything is just combined, don't overmix, or the slice will be tough!
  9. Pour the mixture into the prepared tin and smooth the surface with a spatula.
  10. Sprinkle the remaining mozzarella over the top.Swirl the pizza sauce over the top, and add pieces of pineapple for decoration.
  11. Bake for 35 to 40 minutes or until the slice is firm to the touch and the cheese is deep golden brown.
  12. Allow the slice to stand in the tin for at least 15 minutes before lifting it out and cutting into squares.
  13. Serve warm with a side salad, or cold as a snack. It’s a tropical, cheesy Aussie favourite that’s even better the next day!
