Lady Flo Pumpkin Scone
1cupChilled mashed pumpkin
2cupSelf raising flour
- Beat together margarine, sugar and salt.
- Add egg, then pumpkin and stir in the flour.
- Turn on to floured board and cut into desired shapes.
- Place onto a greased baking tray or a tray lined with baking paper.
- Place on the top shelf of a very hot oven 225-250u02daC for 15-20 minutes.

Make a larger batch than needed and freeze them in portions for future weeks. Try adding some sultanas or chopped dates for something a bit different.
