Ingredients

1unitEgg, fried or mashed hard boiled
0.5cupSalad leaves, washed
1tbspChoice of condiment: tomato chutney, sauce, yoghurt or sour cream
0.50cupMexican mix

Method

  1. For mexican mix fry onion and garlic in olive oil. Add mince and brown if using. Add seasoning and fry lightly.rnMexican Mix ingredients:rn2 tbsp Olive oilrn1 x onion, dicedrn2-3 tsp garlic, crushedrn2-3 tbsp Burrito seasoning or paprikarn2 cans crushed tomatoesrn1 can red kidney beans, drainedrn500g beef mince (optional)rn
  2. Add crushed tomatoes and kidney beans and simmer until thickened.
  3. Spread condiment down the centre of a warmed wrap.
  4. Top with salad leaves, mexican mix and egg.
