Mexican Egg and Bean Wrap
1unitEgg, fried or mashed hard boiled
0.5cupSalad leaves, washed
1tbspChoice of condiment: tomato chutney, sauce, yoghurt or sour cream
- For mexican mix fry onion and garlic in olive oil. Add mince and brown if using. Add seasoning and fry lightly.rnMexican Mix ingredients:rn2 tbsp Olive oilrn1 x onion, dicedrn2-3 tsp garlic, crushedrn2-3 tbsp Burrito seasoning or paprikarn2 cans crushed tomatoesrn1 can red kidney beans, drainedrn500g beef mince (optional)rn
- Add crushed tomatoes and kidney beans and simmer until thickened.
- Spread condiment down the centre of a warmed wrap.
- Top with salad leaves, mexican mix and egg.
A spicy twist to an old favourite.
