2kgPork scotch fillet or collar
2cupsDates
400gCanned tomato
1wholeOnion
4wholeGarlic Cloves
4stalksCelery, leaves attached
1wholeLeek
1wholeCapsicum
1wholeLong Chilli, optional
1wholeCabbage
3wholeCarrot, grated
2wholeApples
250gMayo
30Hot dog roll

Method

  1. Grate all vegetables through an electric grater.
  2. Place all pulled pork ingredients into a slow cooker and cook for 7hrs (stir occasionally)
  3. Prep Coleslaw – grate cabbage, carrot and apple. Mix in mayo and set aside in fridge.
  4. Once pork is tender, pull apart with either a fork or electric beater.
  5. Serve with coleslaw placed onto the roll first and then add the pulled pork on top.
