Quick Catch Fish Curry

Ingredients
500gfrozen basa fillets
1tsp minced garlic
1cup water
1vegetable stock cube
1/2 cup frozen diced onions
500gfrozen peas
500gfrozen beans
250gfrozen spinach
1-2tbsp curry powder
Cooked rice
Method
- Add 1 cup of water and stock cube to a saucepan and bring to the boil.
- Add fish, onions and garlic, cover and cook for 10 minutes, stirring regularly.
- Add frozen vegetables, cover and cook for 5-8 minutes.
- Add curry powder, stir through and continue to cook for 2 minutes.
- Once the fish has broken apart, reduce heat and simmer for 5 minutes.
- Serve with rice.

Ready in around 25 minutes, it’s a simple, nutritious dish that’s full of flavour and perfect served over rice for an easy tuckshop meal.
