Ingredients
4unitEggs, hard boiled and quartered
500gNew potatoes, halved and boiled until tender (skin on if possible)
1cupMayonnaise, reduced fat
1unitCannellini beans, drained can
3unitGreen beans, blanched handful
2cupGreen peas, cooked
3unitCarrots, cooked and diced
2tbspCapers
4unitGherkins, finely chopped
2tbspParsley, chopped
4unitBeetroot, chopped slices
Method
- Peel and cube potatoes.
- Remove yolks from eggs once boiled.
- Toss potatoes, chopped egg whites and all other remaining ingredients in a bowl except the beetroot and egg yolks.
- Garnish with diced beetroot and crushed egg yolks.
