Ingredients

500gchicken thigh fillets
1/2cup frozen onions
1tsp minced garlic
1tsp crushed ginger
500gfrozen stir fry vegetables, thawed
2tbsp soy sauce
2tbsp hoisin sauce
1-2tsp oil
Cooked rice

Method

  1. Cut chicken thighs into strips.
  2. Add oil to frying pan, bring to medium-high heat and add chicken, onion, garlic and ginger.
  3. Cook for 5 minutes or until chicken is browned.
  4. Add vegetables to pan and stir quickly for 3-5 minutes or until vegetables are cooked.
  5. Add soy sauce and hoisin sauce and stir through until chicken is cooked.
  6. Serve with rice.
