Summer Sweetness Salad

30gBaby Spinach Leaves
5gRed Onion, chopped
1eachItalian dressing (dressing pot)
55gChicken Breast, raw
60gSweet Potato, chopped
- Cook chicken (poached, boiled, steamed or grilled). Once cooked, dice chicken and set aside
- Roast sweet potato in oven under golden and tender.
- Assemble salad - place spinach in container. Top with chicken, onion, feta, sweet potato and cranberries. Add Italian dressing pot to container. Serve.

To make this recipe vegetarian friendly, use flavoured tofu or chickpeas (drain chickpeas, cook in olive or canola oil with chosen herbs and spices). Be creative – try Mexican or Moroccan flavours.
