Ingredients

1tbspvegetable oil
500glean beef mince
2tspminced garlic
2tspcrushed ginger
1/4cupteriyaki marinade/sauce
2cupswhite, basmati or brown rice, cooked
1yellow capsicum, cut into strips
1red capsicum, cut into strips
10baby cucumbers, cut into quarters
2cupspeas, cooked
2tbspsesame seeds (to garnish) – optional

Method

  1. Heat oil in a pan, add garlic and ginger and cook for 20 seconds.
  2. Add the beef mince and cook, breaking it up with the back of a wooden spoon, for 5 minutes until browned.
  3. Reduce heat and add teriyaki marinade. Stir to mix evenly and fry off, uncovered, for 3-5 minutes until sauce caramelises.
  4. Build your bowl with ½ cup of rice, ½ cup of teriyaki beef, ½ cup of pease, 3-4 capsicum sticks (each colour) and 4 cucumber sticks.
  5. Sprinkle with sesame seeds and add a small serve of Kewpie mayo (optional).
