Ingredients

500gChicken mince
50gRice vermicelli noodles
2tbspSweet chilli sauce, plus extra to serve
1eachCarrot, grated
1eachZucchini, grated
1eachEgg
1cupRolled oats
2tbspFresh coriander, chopped (optional)

Method

  1. Soak noodles in boiling water for 10 minutes or until soft, then cut into smaller pieces.
  2. Place chicken mince, noodles, oats, zucchini, carrot, sweet chilli sauce and coriander into a bowl and hand mix to combine.
  3. Spoon mixture into teaspoon and shape into 30 balls.
  4. Line a baking tray with baking paper and cook in 180 deg C oven for about 15 minutes.
  5. Serve on a salad wrap or with a side salad.
