Vegetable Tater Tots

Ingredients
2mediumpotatoes
2mediumcarrots, peeled and grated
2cupsbroccoli florets
4sliceswholemeal bread
1cuplight grated cheese
1tspsalt
1.5tsponion powder
1.5tspgarlic powder
Method
- Preheat oven to 200 °C.
- Line baking tray with baking paper.
- Peel potatoes and boil until soft.
- Bake wholemeal bread till crispy, then once cooled, blitz until they form a breadcrumb consistency.
- In the food processor, add potato, carrot and broccoli. Blend together till it reaches crumb-like consistency (be careful not to over blend).
- Transfer mixture to a clean kitchen cloth and squeeze out as much excess liquid as possible.
- In a large bowl, combine vegetable mixture and remaining ingredients. Mix well until combined.
- Form mixture into desired size (balls) and place them onto baking sheet.
- Baked for 20-25 minutes at 180°C or until golden and crispy.
