Ingredients

12medium cos lettuce leaves
3cups cooked rice (white or brown)
2cups diced and roasted sweet potato
2cups sliced and roasted zucchini
2cups diced and roasted pumpkin
1and ½ cups cherry tomatoes, halved
2cups cauliflower florets, roasted
1can (400g) chickpeas, drained and rinsed
1/4cup pepitas (pumpkin seeds)
300mlGreen Goddess salad dressing

Method

  1. In a bowl, add 2 Cos lettuce leaves, ½ cup rice, ⅓ cup sweet potato, ⅓ cup chickpeas, ⅓ cup zucchini, ¼ cup cherry tomatoes, ⅓ cup pumpkin and ⅓ cup cauliflower.
  2. Sprinkle with a small handful of pepitas.
  3. Add a small tub of green goddess dressing on top.
  4. Serve warm or cold.

Variations

  • Use any veggies you have on hand… whatever is popular with students. Red onion is another great addition.
  • Serve warm or cold.
