Ingredients

2Zucchini, grated
3Spring onions, sliced
60gBaby spinach
150gWholemeal self-raising flour
60gLite cheese, grated
100gLow fat fetta
180gFrozen peas
5Eggs
60mlLite milk

Method

  1. Preheat oven to 180 C
  2. Line a 20 x 30cm pan with baking paper, allowing the sides to overhang
  3. Combine the zucchini, spring onion, spinach, flour, cheese, half the fetta and 120g of peas in a bowl
  4. Whisk the eggs and milk in a small bowl
  5. Add the egg mixture to the zucchini mixture and stir to combine
  6. Spoon into prepared pan and smooth the surface
  7. Top with remaining peas and fetta and bake for 40 minutes or until the slice is firm to touch
  8. Cut into squares and serve warm or cooled
