Zucchini Slice

Ingredients
2Zucchini, grated
3Spring onions, sliced
60gBaby spinach
150gWholemeal self-raising flour
60gLite cheese, grated
100gLow fat fetta
180gFrozen peas
5Eggs
60mlLite milk
Method
- Preheat oven to 180 C
- Line a 20 x 30cm pan with baking paper, allowing the sides to overhang
- Combine the zucchini, spring onion, spinach, flour, cheese, half the fetta and 120g of peas in a bowl
- Whisk the eggs and milk in a small bowl
- Add the egg mixture to the zucchini mixture and stir to combine
- Spoon into prepared pan and smooth the surface
- Top with remaining peas and fetta and bake for 40 minutes or until the slice is firm to touch
- Cut into squares and serve warm or cooled
