Method

  1. Mix salad ingredients with and toss with dressing when ready ready to portion out into boats.
  2. Fill each boat with salad and top with cooked chicken.

Variations

Swap chicken for tuna, ham or any other cold meats or offer a vegetarian version. The boats also bake well so can be filled with a quiche mixture or savoury mince topped with mashed potato and placed in a moderate oven for 5 to 10 minutes.
