1Bunch of coriander
1Bunch of parsley
1tspCrushed chilli
0.5cupLime juice
2tbspExtra virgin olive oil
2pinchSalt and pepper
3Large onions
3Red capsicums
6Green capsicums
6cupsCorn
2cupsDrained kidney beans
2kgLean beef mince
1kgRice, cooked
1tbspSmokey paprika
0.5tbspCumin
42tbspCoriander, dried
4212-inch tortillas
5kgCheese low fat, grated
5cupsTomatoes, diced
3cupsLettuce, chopped
1cupChipotle barbeque sauce

Method

  1. To make a chimichurri, blend fresh parsley and coriander, chilli, lime juice, oil, salt and pepper in a food processor
  2. Saute capsicums and onion in a large pan
  3. Mix in corn and kidney beans and remove from pan
  4. Saute beef until brown and strain excess liquid
  5. Return beef to pan and add in spices, capsicum mix, chipotle sauce and rice
  6. Combine cheese and chimichurri mixture
  7. Layout tortillas on a bench and 2 cups of beef mix, 1/2 cup chimichurri mix, a squirt of chipotle, lettuce and tomato
  8. Roll up all burritos and wrap in foil or paper
