Ingredients

1/4cupChia seeds
1.25cupLight coconut milk
2tbspUnsweetened coconut, shredded
1tspVanilla extract
2tbspHoney
Strawberries, blueberries or mango to serve
Coconut chips or granola

Method

  1. Lightly mix all ingredients together except the fruit and coconut chips or granola
  2. Let ingredients sit for 10 minutes, stirring every 2 minutes
  3. Cover and place in fridge overnight
  4. Serve into portions and top with chopped fruit and coconut chips or granola
