Early Riser Muffin

- In a large mixing bowl combine eggs and ham well.
- Heat a large non stick pan or spray a saucepan with cooking spray.
- Add egg mixture and heat gently while stirring occasionally.
- When thick add parsley and serve on toasted muffin.
Use reduced salt ham.
Pour mixture into egg rings if using a BBQ or electric frypan.
