Easy Soy & Garlic Teriyaki Chicken Bowl

Ingredients
2.5kgcooked chicken breast, cubed
1 tbspolive oil
2large brown onions, sliced/diced (optional)
4 tbspgarlic powder or fresh minced garlic (6 cloves)
2 cupsof salt-reduced soy sauce
3 tbspVegeta seasoning
1 tspcaster sugar
1Lwater
1 tbspcornflour (for thickening)
2 tbspsesame seeds (optional)
5 cupsjasmine rice
10 cupsfrozen peas
Method
- Pre-heat oven to 180 degrees Celsius.
- Cook the rice in the rice cooker according to the packet instructions.
- To make the sauce, in a big mixing jug or bowl, combine soy sauce, Vegeta, sugar, and water. Stir until the sugar is dissolved.
- Meanwhile, brown the onion in a pan, adding the garlic at the end for an additional minute.
- In a large, deep roasting pan, add the chicken breast, and cooked onions and garlic.
- Pour the sauce over the chicken, ensuring every piece is coated.
- Bake in the oven for 25-30 minutes, or until the chicken is browned and the sauce has reduced.
- If sauce is still runny, mix 1 tbsp cornflour with ½ cup cold water and stir into the pan. Return to oven for 5 minutes until thickened.
- In the meantime, cook the peas in the microwave for 4 minutes, or until softened.
- To serve, place half a cup of rice, ¾ cup of chicken and half a cup of peas into round containers and top with a sprinkling of sesame seeds (optional).

Variations
