Easy Soy & Garlic Teriyaki Chicken Bowl

Ingredients

2.5kgcooked chicken breast, cubed
1 tbspolive oil
2large brown onions, sliced/diced (optional)
4 tbspgarlic powder or fresh minced garlic (6 cloves)
2 cupsof salt-reduced soy sauce
3 tbspVegeta seasoning
1 tspcaster sugar
1Lwater
1 tbspcornflour (for thickening)
2 tbspsesame seeds (optional)
5 cupsjasmine rice
10 cupsfrozen peas

Method

  1. Pre-heat oven to 180 degrees Celsius.
  2. Cook the rice in the rice cooker according to the packet instructions.
  3. To make the sauce, in a big mixing jug or bowl, combine soy sauce, Vegeta, sugar, and water. Stir until the sugar is dissolved.
  4. Meanwhile, brown the onion in a pan, adding the garlic at the end for an additional minute.
  5. In a large, deep roasting pan, add the chicken breast, and cooked onions and garlic.
  6. Pour the sauce over the chicken, ensuring every piece is coated.
  7. Bake in the oven for 25-30 minutes, or until the chicken is browned and the sauce has reduced.
  8. If sauce is still runny, mix 1 tbsp cornflour with ½ cup cold water and stir into the pan. Return to oven for 5 minutes until thickened.
  9. In the meantime, cook the peas in the microwave for 4 minutes, or until softened.
  10. To serve, place half a cup of rice, ¾ cup of chicken and half a cup of peas into round containers and top with a sprinkling of sesame seeds (optional).
