Fruity Yoghurt Slice

Ingredients

1cupdried apricots
1cupsultanas
1cupshredded coconut
½cupself-raising flour
½cupwholemeal self-raising flour
¼cupbrown sugar
250gramsplain yoghurt
Splash ofmilk, reduced fat, if required

Method

  1. Preheat oven to 180°C. Line a slice pan with baking paper.
  2. Combine apricots, sultanas, coconut, both flours and sugar in a large bowl.
  3. Add yogurt and mix until mixture holds well together. If it’s too dry, add a splash of milk.
  4. Spread mixture evenly into a slice pan.
  5. Bake for 30-40 minutes or until a skewer comes out clean.

Variations
