Ingredients
800gPumpkin, grated
80gMargarine
1kgLow fat bacon, diced
4Onions, finely diced
4Garlic cloves, crushed
1kgAborio rice
8cupsChicken stock
1cupParmesan cheese
4tspOlive oil
8cupsWater
Method
- Put grated pumpkin and margarine into a saucepan and cook through, stirring occasionally
- Once cooked, mash pumpkin
- In a frypan cook bacon with a touch of oil. Add onion and garlic and cook until translucent (DO NOT BROWN)
- Remove onion mix from frypan
- Add oil and rice to frypan, mix so oil spreads through rice. Add stock and stir through
- Allow to simmer, stirring occasionally and add extra water when needed
- Once nearly cooked stir through onion, pumpkin and parmesan. Serve
