Ingredients

800gPumpkin, grated
80gMargarine
1kgLow fat bacon, diced
4Onions, finely diced
4Garlic cloves, crushed
1kgAborio rice
8cupsChicken stock
1cupParmesan cheese
4tspOlive oil
8cupsWater

Method

  1. Put grated pumpkin and margarine into a saucepan and cook through, stirring occasionally
  2. Once cooked, mash pumpkin
  3. In a frypan cook bacon with a touch of oil. Add onion and garlic and cook until translucent (DO NOT BROWN)
  4. Remove onion mix from frypan
  5. Add oil and rice to frypan, mix so oil spreads through rice. Add stock and stir through
  6. Allow to simmer, stirring occasionally and add extra water when needed
  7. Once nearly cooked stir through onion, pumpkin and parmesan. Serve
