Healthy Two-Minute Noodles

Ingredients
340gpacket Thin Egg Noodles
1.2Lchicken stock (store-bought or homemade)
3 cupsfrozen peas, carrot and corn
300gsliced chicken breast, cooked
Method
- To prepare the noodles, soak them in 1.2l of stock for around 15-20 minutes (or prepare as per the packet instructions).
- Microwave the frozen vegetables for 4 minutes in the microwave.
- Portion the noodles (including the stock) into flat bottom, round containers.
- Add half a cup of veggies to each.
- Add 50g of the sliced chicken to each.
- Place lid on container and serve.
