Ingredients

340gpacket Thin Egg Noodles
1.2Lchicken stock (store-bought or homemade)
3 cupsfrozen peas, carrot and corn
300gsliced chicken breast, cooked

Method

  1. To prepare the noodles, soak them in 1.2l of stock for around 15-20 minutes (or prepare as per the packet instructions).
  2. Microwave the frozen vegetables for 4 minutes in the microwave.
  3. Portion the noodles (including the stock) into flat bottom, round containers.
  4. Add half a cup of veggies to each.
  5. Add 50g of the sliced chicken to each.
  6. Place lid on container and serve.

Variations

  • Omit the chicken to serve as a vegetarian option.
