Magic Mince

500gbeef mince
1brown onion, diced
400gcan of red kidneys beans
400gcan of refried beans
400gcan of crushed tomatoes
1large carrot, finely grated
400gcan of corn
Halfof a 400g can black beans
1tspmedium-strength chilli powder


  1. Heat oil In a large frying pan, add onion and sauté until cooked through. Add beef mince and use a spatula to break it up, then fry until the mince has browned.
  2. Add the tinned tomatoes and chilli powder and stir through.
  3. Add kidney beans, black beans, grated carrot and corn and simmer until tomatoes have started to reduce.
  4. Add the refried beans and stir through, simmering for 5 minutes.
  5. Taste and add more chilli if required.
