Mary Anne’s Fried Rice

Ingredients

3cupsjasmine rice
3cupsfrozen peas, corn and carrots
210gsalt-reduced ham, diced
4eggs
4 tbspsoy sauce
2 tspVegeta seasoning powder

Method

  1. Cook rice in the rice cooker according to packet instructions.
  2. Once cooked, place in a large bowl, add the soy sauce and Vegeta and stir through.
  3. Cook frozen vegetables in the microwave for 4 minutes.
  4. Meanwhile, whisk eggs in a bowl and use a very hot work or electric frying pan to cook into a large omelette. Once cooked, on a chopping board, cut into small squares.
  5. Cook ham in the same wok/pan until slightly browned.
  6. Add the rice back in and stir through.
  7. Add the veggies and diced egg in and stir through.
  8. Serve in a 340ml foil containers.

Variations

  • Add chicken if desired.
  • Add additional veggies like capsicum and zucchini if on hand.
  • A wok is the best way to make this recipe, but a large electric frying pan also works.
  • To make this gluten-free, opt for gluten-free soy sauce
  • To make this vegetarian, omit the ham.
