1KgBeef mince
4tbspCumin
1Egg
1Juice and zest of lemon
2tbspSeeded mustard
100gFresh coriander
1cupDried breadcrumbs
8 pinchesSalt and pepper
4tbspPlain yoghurt
3tbspTahini
13tbspHoney
3Single oval Turkish breads
1tbspParsley, chopped
3Cucumbers, sliced
2Tomatoes, sliced
1Red onion, finely sliced
Method
- Mix together beef, tbsp cumin, egg, lemon zest and juice, mustard, 80g coriander, breadcrumbs and salt and pepper
- Form mixture into burger shaped patties and bake on baking sheet for 10 - 15 minutes at 180 C
- Meanwhile, to make the dressing, combine yoghurt, tahini, remaining cumin, honey and 1 tsp salt
- Cut Turkish breads in half and toast the insides of the bread on a hot grill
- Distribute patties, dressing, cucumber, tomato, onion, parsley and remaing coriander between the breads
