1KgBeef mince
4tbspCumin
1eachEgg
1eachJuice and zest of lemon
2tbspSeeded mustard
100gFresh coriander
1cupDried breadcrumbs
8SelectSalt and pepper
4tbspPlain yoghurt
3tbspTahini
13tbspHoney
3eachSingle oval Turkish breads
1tbspParsley, chopped
3eachCucumber, sliced
2eachTomato, sliced
eachRed onion, finely sliced

Method

  1. Mix together beef, tbsp cumin, egg, lemon zest and juice, mustard, 80g coriander, breadcrumbs and salt and pepper
  2. Form mixture into burger shaped patties and bake on baking sheet for 10 - 15 minutes at 180 C
  3. Meanwhile, to make the dressing, combine yoghurt, tahini, remaining cumin, honey and 1 tsp salt
  4. Cut Turkish breads in half and toast the insides of the bread on a hot grill
  5. Distribute patties, dressing, cucumber, tomato, onion, parsley and remaing coriander between the breads
