Ingredients
300gChicken
1tbspMoroccan seasoning
2Sweet potatoes
1cupQuinoa, cooked
0.75cupChickpeas
0.5cupCranberries
0.25cupOrange juice
0.25cupOlive oil
1tspSugar
2tbspApple cider vinegar
Method
- Dice chicken into cubes and season with Moroccan seasoning
- Heat chicken in a fry pan until cooked through
- Cut sweet potato into cubes and bake in oven until cooked but still firm
- In a large bowl combine chicken, quinoa, chickpeas and cranberries
- In a seperate bowl combine orange juice, oil, sugar and apple cider vinegar
- Divide chicken mix into individual containers and serve with dressing on the side
