Ingredients

1kgbeef mince
2onions, diced
130gpacket of taco seasoning
2tbspcumin
2tspbeef stock powder
1 1/2cuprice (uncooked)
5cupfrozen mixed veg (peas, carrot, corn)
1400gcan of kidney beans
600ggrated cheese
20tortilla wraps (10 inch)

Method

  1. Cook diced onion until translucent
  2. Add beef and cook until browned
  3. Add seasoning, cumin, beef stock, rice and 3.5 cups of water
  4. Cook for 10-15mins until rice is cooked through
  5. Meanwhile cook frozen vegetables in microwave on high for 5 minutes.
  6. Add vegetables to meat & rice mix.
  7. Blend the kidney beans in food processor until a smooth paste forms, then add to beef, rice and vegetable mix. Allow to cool.
  8. Lay wraps flat, add 1 cup of beef, bean & rice mix and 1/3 cup of grated cheese.
  9. Wrap in foil and freeze.
  10. Reheat in oven for 1 hour from frozen.
