1KgPumpkin, peeled and deseeded
4unitOnions, chopped
2tbspVegetable oil
3tbspKorma curry paste
1cupLow fat yoghurt
1cupLow fat coconut milk
100gSnow peas or green beans
Slivered almonds (optional)
Rice to serve

Method

  1. Heat oil in a large fry pan and cook onions until golden.
  2. Add pumpkin, cut into cubes, and stir until the pumpkin also turns golden brown.
  3. Add curry paste, adjusting the quantity depending on how spicy the blend is, and stir for 2 minutes.
  4. Add yoghurt, coconut milk and remaining vegetables and simmer gently for 10-15 minutes until vegetables are tender. Test the pumpkin is cooked through by inserting a fork.
  5. Serve on rice with optional almonds.
